Poutine
Poutine Recipe:
Ingredients:
-French fries, cooked and hot -- 1 1/2 pounds
-Cheddar cheese curds, broken into chunks -- 2 cups
-Beef gravy, hot -- 2 cups
Directions:
-Place the hot French fries in a large bowl or individual serving bowls.
-Sprinkle over the cheese curds, then pour over a liberal amount of the hot beef gravy.
-Serve with a fork.

Soupe Aux Pois or (pea soup)
Soupe Aux Pois Recipe:
Ingredients:
-1 lb whole dried yellow peas
-8 cups water
-1/2 lb salt pork (or a ham bone)
-1 large onion, chopped
-1/2 cup celery, chopped finely
-1/4 cup carrot, grated or chopped finely
-1 teaspoon dried savory
Directions:-Wash and sort peas; place in a large pot, bring to a boil.
-Remove from heat and let sit for 1 hour.
-Add salt pork, onion, celery, carrots, savory and 1 tsp salt.
-Bring to a boil; reduce heat and simmer until peas are very tender, about 2 hours, adding more water if needed.
-Remove salt pork; chop and return to soup.
-Season to taste with salt and pepper.

Canadian Bacon Recipe:

-2 lb. piece of Canadian bacon
-1/2 c. brown sugar
-1/2 tsp. dry mustard
-1/2 c. unsweetened pineapple juice
Directions:
Bake, uncovered at 325 degrees for 1 hour. Baste every 15 minutes.
